Some very tasty things are happening in Richmond, Virginia,
starting with the lemon honey vinaigrette that Urban Farmhouse (1217 E Cary St) is putting on
their summer berry salad. Sure the ingredients are simple, lemon, honey,
vinegar, etc, but for some reason this dressing is blowing my mind. Add
in the spinach, local Agri-berry strawberries and crunchy almonds and it is
just about heaven in a to-go box.
Veggie lunches are tricky downtown and even though PETA listed
Richmond as one of the most vegan friendly cities (the number 10 spot) it is
still an effort to keep things healthy at lunch time when faced with noon time hunger.
While I am working out what it means to go meatless
and still enjoy the Richmond restaurant scene, I have also been very VERY busy with my other
project, opening an indoor cycling studio. There have been some major ups and
downs over the past few weeks when the blog went silent. My hope is that there
will be more good news to share soon.
In my experience good news corresponds with good food, so for the time being, I will be enjoying my berry salad as part of the half salad,
half sandwich two-some with a hummus sandwich on multigrain bread and a side of
carrots.
I LOVE Urban Farmhouse! If I worked downtown, I'd probably go there all the time!
